Did you know that cherries are rich in important phytochemicals like anthocyanins and quercetin that have strong anti-inflammatory properties? For this reason, cherries have been proven to help combat inflammation and lower the pain of gouts and arthritis.

Cherries are also a great source of fibre, rich in vitamin C and potassium.

The glycaemic index of cherries is quite low, so provided you don’t go crazy with the quantities, they can be enjoyed even if you are trying to keep your blood sugar in balance or lose weight.

Adding some fresh fruit to your morning breakfast is a great way to start your day and overnight oats or chia puddings can provide a super quick meal because you prepare them the night before.

Ingredients: (serves 2)

  • 1/4 cup Chia Seeds
  • 1cup Plain Coconut Milk (unsweetened, from the carton)
  • 1/4 cup Chocolate Protein Powder (I like Pulsin, SunWarrior and  Purition)
  • 3/4 cup Cherries (pitted)
  • 1 tbsp Unsweetened Shredded Coconut

In a large bowl, combine the chia seeds with the coconut milk and the protein powder. Whisk well, making sure all the seeds are incorporated. Refrigerate for at least 20 minutes or overnight to thicken.

When you are ready to eat it, top the chia pudding with the cherries and the shredded coconut.
